Cream of Parsnip Soup Recipe

A Mouth Watering Parsnip Soup

The parsnip has been popular for centuries due to their sweet flavor. They create a simple soup with a distinctive flavor, you can also add 2 bacon strips while cooking and remove them before serving to add a little more flavor.


450g parsnips
1.1 liters vegetable stock or water
150ml milk
110g onions
25g flour
Chopped parsley, to garnish

Recipe Instructions

Cook the vegetables.
In a large pan, bring the stock/water to the boil and add the vegetables. Cover the pan and let the vegetables simmer for 30 – 40 minutes until they are cooked.

Thicken the soup.
Mix together the flour with a little of the milk to make a paste. Add the paste to the soup and then add the remaining milk and stir well. The soup will thicken and become creamier.

Pour into soup bowls and sprinkle over a little parsley.
