Deep Fried Parsnips Crisps Recipe

A Simple Home-made Snack

This is a home-made nibble recipe for crunchy, sweet, deep-fried root crisps, perfect to serve with drinks.


500-600g large parsnips
Sunflower oil, for deep-frying

Recipe Instructions

Prepare the parsnips.
Use a mandolin and slice the parsnips lengthways into paper-thin slices. Drop them into cold water with ice cubes for ½ hour to encourage them to curl. Drain the parsnip slices and dry them thoroughly.

Fry the parsnip crisps.
Heat the oil in a deep fryer to 185C. Drop the parsnip slices into the hot oil a handful at a time. Use a wooden chopstick and separate the slices in the oil. Once they turn a pale brown color, remove them from the oil with a slotted spoon. Drain them on kitchen paper and season them with salt. Repeat the process with all the parsnip slices. Serve immediately.
