A healthy salad as parsnips are a good source of Vitamin C and used raw it has more antioxidants than when cooked.

Ingredients

3 parsnips, peeled and shaved very thinly
2 hearts of romaine, cut into bite-size pieces
6 dates, pitted and cut into ½ inch pieces
2 tablespoons sherry vinegar
3 tablespoons extra virgin olive oil
Coarse salt and freshly ground pepper

Recipe Instructions

Make the dressing.
Whisk together the vinegar and the oil and season with the salt and pepper.

Make the salad.
Mix together the parsnips, lettuce and dates. Toss well. Drizzle over the dressing and season with salt and pepper.
