Parsnip and Apple Soup Recipe

A Delicious Soup Recipe

Roasted parsnips make an incredibly delicious soup and adding apple to the soup makes it even sweeter. This soup is rich and creamy and ever so simple to make.


500g parsnips, roasted in a little olive oil for about 30 minutes
2 onions
1 apple, chopped and peeled
900ml vegetable stock
75ml soya milk
Margarine or vegetable oil
Salt and pepper

Recipe Instructions

Prepare the vegetables.
Finely chop the onions and cut the parsnips into chunks. Heat the oil or butter in a large saucepan and add the onions, parsnip and apple. Cook for 10 minutes until the vegetables are soft and then add the stock.

Make the soup.
Let the soup simmer for 20 minutes and then remove from the heat. Allow the soup to cool slightly and then puree the soup with a blender. If the soup is too thick, add the soya milk and extra water and puree further. Return to the stove and reheat before serving.

Season with salt and pepper and serve.
