Parsnip and Date Cake Recipe

A Yummy Parsnip Treat

A healthy cake recipe that has a sweet and nutty flavor. Serve with a little whipped cream to make it even more decadent.


250g parsnip, peeled and roughly chopped
200g stoned dates, roughly chopped
1 teaspoon vanilla essence
1 teaspoon cinnamon
300g self raising flour
100g margarine
1 teaspoon bicarbonate of soda
2 bananas, pureed
150ml syrup (optional)

Recipe Instructions

Preheat oven to 170C.

Cook the dates.
Put the dates in a saucepan over a medium heat and cover them with water. Leave them until they start to dissolve. Add the vanilla essence, margarine, pureed bananas, syrup and cinnamon. Once the margarine has melted remove the saucepan from the heat.

Cook the parsnip.
Boil the parsnips in water until they are tender. Remove them from the water and blend them.

Make the cake mixture.
Blend the parsnip mixture with the date mixture and sift in the flour and the bicarb of soda. Mix well, if the mixture is too dry you can add some water. When all the ingredients are mixed together, whisk the mixture. The mixture should now be dropping.

Bake the cake.
Put the mixture into a cake time and place in the oven. Bake for 1 hour until the outside is crusty but the inside is moist.
