Parsnip and Potato Casserole Recipe

A Yummy Parsnip Treat

A very simple, versatile and easy to make casserole recipe which will complement any meat dish.


½ lb. parsnips, peeled and chopped
½ lb. potatoes, peeled and chopped
1 tablespoon Parmesan cheese, grated
¼ cup fat-free Swiss cheese, grated
2 tablespoons evaporated skim milk
2 teaspoons unsalted butter, softened
2 tablespoons parsley, chopped

Recipe Instructions

Preheat the oven to 375F.

Steam the vegetables.
Place the potatoes and parsnips in a steamer basket over boiling water, cover the saucepan and steam the vegetables for 10 – 12 minutes until tender. Drain the vegetables and return them to the pan.

Make the mash.
Mash the vegetables with the remaining ingredients and season with salt and pepper.

Bake the casserole.
Pour the mash mixture into a buttered baking dish and place in the preheated oven. Bake for 20 minutes until the mixture is bubbly.
