Parsnip Curry Recipe

An Easy to Make Parsnip Recipe

A simple but delicious vegetarian curry that is easy to make using only one pot to cook.


1 pound parsnips, peeled and cubed
½ cup chopped onion
1/3 cup green peppers, cut into thin strips
¼ cup chopped peanuts
1 tablespoon oil
½ cup water
1 teaspoon chili powder
½ teaspoon cumin
1½ teaspoons turmeric
½ teaspoon cayenne
½ teaspoon salt

Recipe Instructions

Cook the curry.
Sauté the onion in the oil for 5 – 8 minutes until it turns golden. Add the spices and cook for another minute stirring constantly. Add the water, salt and parsnips and bring the mixture to the boil. Once boiling, reduce the heat and simmer for 20 – 30 minutes covered until the vegetables are tender but not mushy. The sauce will thicken while simmering.

Garnish with the pepper strips and peanuts and serve.
