Parsnip, Radish and Apple Salad Recipe

A Delighting, Easy to Make Salad

This salad is a perfect cooling complement to any meal. Serve with tuna steaks for a delicious dinner meal.


4 parsnips, thinly sliced
4 radishes, thinly sliced
1lb fresh spinach greens, chopped
2 apples; cored, seeded and thinly sliced

For the dressing;
4 tablespoons balsamic vinegar
¼ cup raw peanuts
2 tablespoons chopped cilantro
2 teaspoons honey
2 tablespoons lemon juice
½ cup plain Greek yogurt
¼ cup olive oil
1 teaspoon salt

Recipe Instructions

Make the salad.
Mix together the radish, parsnip, apple and lemon juice in a medium sized bowl. Toss together well.

Make the dressing.
Mix together the balsamic vinegar, salt and honey in a small bowl. Whisk in the oil, the cilantro and the Greek yogurt. Add the peanuts and mix well to ensure the peanuts are completely coated in the dressing.

Finish the salad.
Drizzle the dressing over the salad and serve.
