Parsnip Soup


Many people have an aversion for parsnips, but this root vegetable is often made into a delicious winter soup that is a common dish in Czechoslovakia.

The ingredients of parsnip soup are different from place to place.  But whatever ingredients are added, the consistency of all parsnip soups is the same — creamy with a bit of texture.

This soup is also easy to make, healthy and delicious.

To make parsnip soup, you would need the following ingredients:

~ 2 parsnips, peeled and sliced into cubes

~ 100 ml of double cream

~ 1 stock cube

~ 750 ml of boiling water

~ 2 tbsp of butter

~ 1 onion, chopped

~ 2 tsp of curry powder

~ 1 clove of garlic, finely chopped

~ dried chili pepper flakes or paprika

~ salt and pepper

Begin by boiling the water in a pot.  Drop in the stock cube and stir until it has completely dissolved.  Transfer into a bowl and set it aside.

Melt butter in a saucepan over medium heat, add the onions and sauté it for three minutes.  Once the onions are translucent, add the garlic, parsnips and curry powder and sauté for two additional minutes.  Then, pour the dissolved stock cube and stir slowly.

Let the mixture simmer for about 10 minutes or until the parsnips become soft.  Once soft, you can use a food processor to blend the mixture.  Add the cream and stir thoroughly.  Season with salt and pepper and use dried chili pepper flakes as garnish.
