Perfect Roast Parsnips Recipe

A Delectable Parsnip Side Dish

Oven roasting the parsnip brings out its sweetness and creates a slightly caramelized outside. An ideal accompaniment to roasts.


500g parsnips, peeled and cut into bite-sized chunks
2 tablespoons vegetable oil

Recipe Instructions

Preheat the oven to 220C.

Cook the parsnips.
Place the parsnip chunks into a saucepan and cover them with water. Bring the water to the boil. Once boiling, reduce the heat and let the parsnips simmer for 5 minutes.
Remove them from the heat and drain the parsnips.

Roast the parsnips.
Heat the oil in a roasting pan until it is very hot. Carefully place the parsnips into the roasting pan and use a spoon to coat each piece of parsnip with the hot oil. Place the roasting pan in the oven and roast the parsnips for 20 minutes. Turn the parsnips over and roast for a further 20 minutes until they are golden brown. Serve immediately.
