Pork, Parsnip and Apricot Stew Recipe

A Very Simple and Tasty Recipe

A hearty stew recipe that combines the sweet flavor of parsnips and apricots which complement the pork very well.


4 cups parsnip, peeled and cut into ½ inch slices
1.5 pounds boneless pork loin, cut into ½ inch pieces
1½ cups onion, chopped
¼ cup dried apricots, chopped
1 cup celery, thinly sliced
¼ cup tomato paste
1 tablespoon olive oil
3 cups chicken broth
2 tablespoons fresh parsley, chopped
2 bay leaves
2 teaspoons dried sage
1 teaspoon dried thyme
1 teaspoon salt
¼ teaspoon ground black pepper

Recipe Instructions

Cook the pork.
Heat the oil in a heavy cooking pot over a moderate heat and add the pork. Cook the pork for 5 – 7 minutes until is has browned then remove it from the pot and set it aside.

Cook the vegetables.
Return the same pot to the heat and add the onion, celery and 2 tablespoons of water and cook for 3 minutes.

Make the stew.
Return the pork to the pot and add the tomato paste, sage, thyme, salt, black pepper, chicken broth and bay leaves and bring the mixture to the boil. Reduce the heat and leave to simmer for 1 hour covered. Add the parsnips and the apricots and simmer for another 30 minutes.

Garnish with parsley and serve.
