Roast Parsnip Purée Recipe

A Delicious Parsnip Side Dish

Roasting parsnips brings out their full rich flavor and caramelizes the natural sugars in the parsnips. In this recipe you purée them with added water and it is delicious.


2 lbs parsnips; peeled, cores removed and chopped
3 tablespoons butter, melted
1½ cup water
Pinch of nutmeg
Salt and pepper to taste

Recipe Instructions

Preheat the oven to 400F.

Roast the parsnips.
Place the chopped parsnips in a mixing bowl with the melted butter and stir to coat them in the butter. Lay the coated parsnips in a roasting pan in a single layer and put them in the oven. Roast them for 20 – 25 minutes until they are lightly golden. Turn once during roasting.

Puree the parsnips.
Put the parsnips and the water in a food processor and puree until the desired consistency is reached. Stir in the nutmeg and season with the salt and pepper.
