Roast Salmon with Crispy Parsnips Recipe

A Simple Home-made Meal

This baked salmon with parsnips and potatoes is a healthy idea for a light supper. A meal on its own, you don’t need to cook anything else.


220g parsnips, peeled and thinly sliced
4 x 120g salmon fillets
440g potatoes, peeled and thinly sliced
4 spring onions, trimmed
2 tablespoons light olive oil
4 sprigs fresh thyme
Lemon wedges

Recipe Instructions

Preheat the oven to 220C.

Bake the vegetables.
Grease a baking dish and place the potatoes and parsnips in the baking dish and drizzle over ½ the olive oil. Place in the oven and bake for 20 minutes, turn the vegetables over and bake for another 10 minutes until the vegetables are soft.

Cook the salmon.
Place the thyme, onions and salmon on top of the baked vegetables and drizzle over the remaining olive oil. Bake for another 8 – 10 minutes until the salmon is cooked.

Serve with the lemon wedges.
