Roasted Parsnip and Carrot Soup Recipe

A Hearty Meal for the Entire Family

This is a simple soup recipe using roasted vegetables which makes it extremely healthy and great to eat if detoxing.

Ingredients

4 parsnips, cut into chunks
7 carrots, cut into small chunks
1 white onion, cut into chunks
5 cloves garlic, skin removed
Olive oil
1 liter vegetable stock
Fresh or dry oregano
Salt
Pepper

Recipe Instructions

Preheat the oven to 400F.

Bake the vegetables.
Place all the vegetables on a baking tray and pour over the olive oil. Season them with salt and pepper and place them in the oven. Bake for 30 minutes until the vegetables are soft.

Make the soup.
Place the roasted vegetables into a large blender and puree them. Add the vegetable stock until the mixture has a soup like texture. Pour the soup into a pot, add a handful of oregano, salt and pepper and bring the mixture to the boil. Simmer the soup for 10 minutes and serve with crusty bread.
