Spiced Parsnip Soup Recipe

an easy to make spicy soup

This is the perfect soup to warm you up on a cold winter’s day. You can substitute the parsnip with carrots or celeriac without loosing any of the delicious flavors.


4 parsnips, peeled and chopped
1 onion, peeled and chopped
2 cloves garlic, peeled and crushed
1 tablespoon olive oil
800ml hot vegetable stock
Few knobs of butter
1 teaspoon toasted ground cumin
1 teaspoon ground ginger
1 teaspoon garam masala
Sea salt and freshly ground black pepper
200ml double cream (optional)

Recipe Instructions

Cook the vegetables.
Heat the oil in a large saucepan and add the onions. Sauté the onions for a few minutes then add the garlic and spices. Stir together well and add the parsnip and a few knobs of butter. Stir the mixture and cook covered for 10 – 15 minutes until the parsnips are soft.

Make the soup.
Once the parsnips are soft, pour in the hot stock making sure to cover the vegetables and bring the mixture to the boil. Season well and add the double cream.

Liquidize the soup.
Pour the soup into a blender and liquidize until smooth. Return the soup to the pan and reheat slowly adjusting the consistency if necessary.

Serve while still warm. Drizzle over a little olive oil and a grating of black pepper.

    Printed several recipes, all look good but just had to come back because the ingredients list doesn’t print. Only the method. Am I missing something?
