Spicy Apple and Parsnip Cake Recipe

A Delicious Parsnip Cake Recipe

This cake is moist, sweet and spicy and can be served as a dessert. If you want to add frosting, frost with a dollop of sweetened whipped cream or your favorite cream cheese.


1 cup parsnips, peeled and grated
1 cup apple, peeled and grated
1 cup chopped walnuts
2 tablespoons crystallized ginger, finely chopped
3 large eggs
½ cup whole milk
1½ cups all-purpose flour
½ cup vegetable oil
½ cup granulated sugar
2 teaspoons baking powder
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon salt
Butter and flour to grease pan

Recipe Instructions

Preheat the oven to 350F.

Mix the dry ingredients.
Mix together the flour, sugar, ginger, baking powder and spices in a medium bowl.

Mix the wet ingredients.
In a medium bowl, whisk together the eggs, oil and milk.

Make the cake mix.
Stir the dry ingredients into the wet ingredients and mix together until combined. Fold in the apple, parsnips and walnuts. Pour the cake mix into a greased and floured baking pan.

Bake the cake.
Bake in the oven for 20 minutes. Remove from the oven and let cool on a wire rack. Once cooled, dust with sugar and serve.
