Spicy Parsnip Soup Recipe

A cheap and healthy soup

This soup is healthy and organic, as well as filling and full of flavor. It is quick and easy to prepare and can be frozen. This soup is best served with delicious fresh crusty bread.


225g parsnip, peeled and sliced
1 potato, peeled and chopped
1 onion, finely chopped
350ml chicken or vegetable stock
¼ teaspoon ground coriander
¼ teaspoon turmeric
¼ teaspoon ground cumin

Recipe Instructions

Cook the ingredients.
In a large saucepan, bring all the ingredients to the boil. Let the soup simmer for 15 minutes stirring occasionally.

Blend the soup.
Remove the saucepan from the heat and let the soup cool slightly. Using a hand blender or liquidizer, blend the soup to from a nice smooth consistency. Place back on the stove and reheat it to serving temperature slowly. Do not let it boil.
