Thai Parsnip and Carrot Salad Recipe

A Mouth Watering Parsnip Salad

This recipe has been adapted from the original “Som Tum” version and it has to be one of the healthiest dishes in the world.

Ingredients

300g parsnip, coarsely grated
400g carrot, coarsely grated carrot
1 teaspoon garlic, chopped
1 medium tomato, cut into 8 wedges
1 tablespoon sugar
3 tablespoons lemon juice
3 tablespoons fish sauce
½ red onion, finely sliced
1 red or green chili, chopped

Recipe Instructions

Make the salad.
Place all the ingredients together in a large serving bowl and toss well to combine.

Serve.
Garnish with mint leaves and serve.
